: Sourdough Pizza al Pastor

: A new take on a Mexican favourite

  1. 425 g unbleached all purpose white flour
  2. 250 ml water
  3. 100g rye sourdough leaven
  4. salt
  5. 1/2 teaspoon dried yeast
  6. 5 tablespoons olive oil
  7. 200g pork fillet
  8. 2 tablespoons olive oil
  9. 2 cloves garlic chopped
  10. 2 tablespoons Indonesian ABC Kecap Manis
  11. 1 cup fresh pineapple peices
  12. 1 dried ancho pepper soaked in water
  13. 1 cup chopped corriander (cilantro)
  14. 6 tablespoons tomatillo salsa
  1. Mix flour, water, leaven and salt in a bowl and knead into dough
  2. Place in oiled bowl and leave to rise for 4 hours
  3. chop pork into small dice
  4. Fry garlic in a wok with 2 tablespoons oil
  5. Add pork and stir fry until cooked
  6. Stir in kecap then leave to cool
  7. Roll out dough into two pizza bases on a floured board
  8. Spread pork, pineapple and ancho over dough
  9. Cook in hot pizza oven until dough risen and pineapple slightly caramelised.
  10. Remove from oven
  11. Spoon salsa over the top and sprinkle with corriander
